Yes...I'm sharing a recipe. Yes, you are on Jess's blog. :)
OK, here's the quick story. There is this AWESOME sandwich at Arby's(Mary, you know this sandwich!!) called the Chicken Salad with Pecans Sandwich. Oh my...it is SOOOO yummy. One problem...it has like 5000 calories and fat grams. OK, that is a slight exaggeration..but only slight! So, I decided to make my own healthy version at home and it is SO good and it requires no actual cooking!!! Therefore, you can't screw it up and there's no real mess! WooHoo! :)
Here is my recipe of the day....week...year...whatever. :)
CHICKEN SALAD SANDWICH WITH WALNUTS
~1 can all white chicken (comes in a can just like tuna, in the tuna aisle)
~LIGHT mayo to taste (I prefer LIGHT Miracle Whip)
~Cut up seedless purple grapes
~Diced apples
~Celery slices
~Walnuts to taste
~One big piece of green leaf lettuce
~100% whole wheat or multi-grain low sugar bread
There you have it! A low fat, low-cal, good carb version of one amazing sandwich!

I love with the knowledge of the South Beach Diet that we can turn our everyday food cravings into something more healthy. I did that with Pumpkin Pie last year for Thanksgiving. Just used Splenda, the lowfat condensed milk, regular pumpkin pie mix and made my own whole wheat crust and it didn't taste any different! Jess you and I should make our own cookbook, turning regular fatty foods with lots of calories and bad carbs into good healthy recipes!

That sandwich sounds good! You are right the one from Arby's (my favorite by the way) is so fattening. That won't help me loose any weight though! Thanks! Love you.
I must admit ever since you mentioned the recipe I have been craving chicken salad. Only I don't like the canned chicken, so I had to cook some up on my own. Also almonds are good too. South beach does give you some good ideas! Thanks, Em
Sure I can whip up a pie! I am a master chef! Kidding! You have become quite the little home cooker I am sure you could do it! I hope it won't only be a week since I have had a baby! I hope it's at least 2! I am only 10 days away! Come on! :)
